Fresh red cabbage and pointed cabbage cut by hand and bruised mixed with salt, red pepper, turmeric, ginger and garlic. After a few weeks of fermentation, you get a very healthy kimchi with a tasty bite.
The cabbage still have a nice texture and can be use as rawfood.
